Be hesitant to go for brands which have too many artificial agents/flavoring agents in the ingredients list. Go for the brand that supplies mostly organic products. 3. Check the color of the oil. The oil should be transparent, not translucent or opaque. There should not be a muddy, dank smell. So be careful, and if possible smell the oil to check if it has gone rancid or not. Generally, white truffle olive oil has a lighter, more fluid flavor than dark truffle. Their essence is infused gently into the olive oil, which has remarkable capability of soaking in flavors. This is what makes it an exceptional combination brushed on different kinds of cheese, or in a salad, or applied on meat. Remember, you do not cook with this, because this should be used as a flavoring agent, not a cooking mode.
